    Once you get it the temp you want it then you season and throw on grill for your grill marks. Its how Ruth Chris Steakhouse cooks their steas

    Ah so you have to cook it twice.

    Seems like a process. I dont do well with those. KISS is the acronym to live by. Start putting in too many "steps" and I will screw it up.

    Store them in Ziploc with all juices ...

    and all air is removed using a straw ...

    I was just getting started really, it ended up great. did a crab boil as well, found great live crabs in Metarie. Was going to go to Westwego , but somebody told me about this other place.

    Yes, I am. I was in New Orleans the last 2 weekends, once on business, the other for a wedding. Im there quite a bit.
