Has to be toasted to point where cheese is melted over the olive salad and salami/ham. Best way to glue it down. The tater salad is for kids that need their gumbo cooled. I loathe that shit.
I make a bastardized cuban pickled cabbage salad and put it on beef or polsausage as an alternative to kraut. Dont care much for mayoslaw. Wouldnt dream of putting it on a sausage or dog.
I don't put potato salad in gumbo, I keep it on the side. I dont now why it works but it does, live a little and give it a try
