Whites and pomps

    got a quick easy mess of 65 nice white trout in about half an hour this morning and left them biting to go check a couple close state water snapper spots but on a whim tried out a spot on the way and found it loaded with pompano. Got 27 of those and had to head in. Best I've ever done on them.

    I haven't had pompano in years. But growing up in SW La it was probably my most favorite salt water fish. The flavor was hard to match. How do you prepare yours?

    First time I ever hear that word pompano. Don't recall ever seeing any of those either. They look an awful lot like the small bait fish my dad and I always had in our shrimp trawl. I loved tossing them to the sea gulls as I was culling between drags.

    You brought back a good memory that was lost somewhere in my mind.

    What did you use for bait? I've never fished for pompano but somebody told me once that you use a small piece of shrimp on a bream hook. I'm pretty sure they have a few of them that hang out by the rock jetties at Fouchon.

    No clue never really caught any except the occasional random 1 or 2 while trout fishing. Any suggestions?

    Those def weren't these. Likely those were hardtails and other assorted small jacks. These are Florida pompano and like I said I don't know much about them except they are supposed to be really good to eat. I know those Florida guess go crazy over them bout the most prized catch there for whatever that's worth.

    Shrimp but on just regular trout size hooks. Had no trouble hooking them

    yea thats what it looks like is the consensus online for folks. I had already filleted them all before looking up anything looks like I should have just gutted and gilled them. I am sure they will be fine. Prob do some in the iron skillet on the grill in a wine and butter sauce....see how that goes. got enough to try a few things maybe be more ready for them if I run into them again.
