Had the RB&R with sausage and corn bread yesterday (typical southern La Monday lunch). Tonight it's left over BBQ: Filet and sausage.
kinda breakfast. i made a relish/salsa out of the last of some fresh home made salsa, a couple of finely chopped tomatoes, grilled corn cut off the cob, and some green onion. will serve that with eggs scrambled with cheese, and some fresh thin corn tortillas. and bacon. mmmm....... not a bad way to clean out the fridge.
got popeyes and put in the fridge to have during the game later. and getting dinner was an ordeal. i swear, the popeyes i went to employees the stupidest people they can find.
grilled chicken thighs, grilled baby bella mushrooms, sauteed green beans, marinated baby cucumbers. i wasnt sure how my chicken would turn out. i didnt have any of the marinades i usually use, and i was too lazy to make one. i had a bottle of ranchero sauce in the pantry to i dumped that and the chicken into a ziplock and marinated it for a couple of days. delish!
