Homemade fried chicken, mashed potatoes, and salad. I got my recipe from Babe's Fried Chicken in Roanoke, TX. They were voted by Southern Living magazine as the best fried chicken in the country a few years back. In the summer time, people bring ice chests and tailgate all afternoon while waiting for a table. Pretty cool atmosphere. Anyway, the big "secret" to their fried chicken is soaking it in salt water for a day before cooking it. It truly does make a huge difference.

We made tacos and burritos for CInco de Mayo last night. Just plain small tex-mex tacos and burritos, none of this Mondo Burrito with 10 silly-ass ingredients crap. All a taco needs is meat, cheese, salsa, lettuce and tomato. All a burrito needs is beans, cheese, onions, and salsa. OK, sometimes I make a combo burrito and add meat. But I say Ptui! on rice, lettuce, olives, sour creme, black beans, melted velveeta, and all that other California crap they put on Nuevo Burritos.
The best part about homemade fajitas (after the fajitas of course) if the leftovers. I made an omelet with the leftover beef, onions and bell peppers this morning. ****ing awesome...
Chinese food leftovers make awesome omelettes as well...(so do omelette leftovers themselves). Another thing you can do with these type of savory leftovers is get some of those croissant rolls in a can and bake the leftovers "en crute" or turnover style.. I have a case of frozen puff pastry dough at the restaurant that I use fairly often, but bread dough is real easy to make...Our friendly guests from south of the border call these empanadas...pizza parlors call them calzones. :thumb:
Bowtie pasta al dente, then tossed with a little garlic I browned in EVOO. Topped off with some fresh grated romano.
