Went to Texas de Brazil tonight...weighed in before at 287.4 and weighed in after at 293.8. 6.4 pounds of ribs, filet, flank steak, and sirloin. And the best part was, it was free.
good lord. it would take me at least a week to eat that much meat, and that if i ate it for lunch and dinner every day. and i was distressed over gaining 3 pounds over the past few weeks....:hihi:
Ok, so I made my first roux this past Sunday... Damn. I knew it took about 25-30+ minutes but to actually do that by myself and not just help someone else do it SUCKED. My hand started swelling a little after about 5 minutes, ha ha. I'm so glad my husband wasn't here to hear me whining :lol:. I held out though and made a gumbo that was almost as good as Maw-maw's. I think with a little practice I'll have it down to a science. I get to try again in two weeks because Jared's mom is coming in for the week and wants to try my gumbo.
I cheat with the roux. Instant Roux... Okie is on the road so she won't hear me say that. Congrats on your gumbo, by the way! Tonight I'm making my own version of French Onion Soup with onions and mushrooms. Sprinkled with swiss cheese and served with french bread for dipping. Mmmmm...
Speaking of cheating on a roux, does anyone watch the tv show with Alton Brown "Good Eats"? He was doing a cajun vs. creole show the other day and he just mixed his oil and flour and stuck the cast iron skillet in the oven on 475 for a few hours... made me wonder if that would actully work? ya know w/out stirring and all... now back to the topic at hand: i'm in the mood for some fried fish with all the trimmings
Momma uses instant roux too and hers just doesn't taste as good as Maw-maw's :dis:. She was slightly upset when I told her that I was getting Maw-maw to teach me, saying "Oh, you're learning the hard way." and I just told her... "You cheat. It's not as good as the long drawn out way Maw-maw does it." Thanks, btw for the congrats!
