ive been making fudge for the past few days. and, of course, i have had to have a few pieces. strictly quality control. :hihi:

i have been making a lot of candy for christmas (to give to friends) over the past couple of days. and i mean a lot! fudge, cherry fudge, chocolate covered almond toffee, and pecan brittle so far. havent gotten to the peanut brittle or pralines yet. or the coconut fudge. or the chocolate covered cherries. or the turtles. i am running out of time though so not all of the things are gonna get made. but on the regular fudge, i have made about 36 pounds so far and have around 18 more pounds to make. my problem is that "quality control" thing. i have to have a bite or two out of every batch of something. today alone that was "tasting" from two batches pecan brittle, one batch cherry fudge, one batch regular fudge, and one batch of toffee.
Just had 6 oz of these peanut butter crispies on the tail end of a pound of SEE'S chewey nuts. To Die for. All while slamming Tecate. and now seeing the kind chili stir up posted by Mr. Peabody, I have the uncontrollable munchies. Sinner. :redface:
Never had pecan brittle but as much as I love peanut brittle, pecan sounds to be great. Christmas eve, my neighbor with the big petunias brought me a plate of homemade fudge with fresh pecans that was really good. It's almost gone. I'm shameless.
I must confess... to someone.... I ate 2 of those soft oreo-cake thingys before I went out to run and it was ONLY 7:45 am!!!!......I cussed myself the entire time ....shoulda just had a beer..:lol:
