I haven't measured it, but it is approximately 6-7" across. But yeah, I probably stole the towel :(

    no

    If using this definition:

    per·fo·ra·tion(pûr[IMG]f[IMG]-r[IMG][IMG]sh[IMG]n)
    n.
    1. A hole or series of holes punched or bored through something,

then it would not be considered perforated.

Green Chile Sauce basic recipe (this is for ladling on top of burritos, Huevos Rancheros, etc)

    ½ cup chopped onion
    1 garlic clove, minced
    1 tablespoon olive oil
    1 tablespoon flour
    ½ cup chicken stock
2 cups chopped New Mexican green chiles (roasted, peeled, seeded). Mail order these from Hatch, New Mexico.
    ½ cup chopped tomato
½ teaspoon mexican oregano (the kind in the pouches in the Mexican aisle of the grocery store...the other stuff is crap)
    1/4 teaspoon cumin
    salt and pepper to taste

sautee onion and garlic in olive oil until translucent
    add oregano and cumin
add flour to make a 'mexican roux'
add rest of ingredients and simmer on low for 45 minutes

    Green Chile Stew

    2 tablespoons olive oil
2 pounds boneless pork, cut into 1-inch cubes
1 medium chopped white onion (I used 1 small onion)
    2-3 cloves garlic, minced
    1/4 cup flour
2 cup peeled and chopped fresh tomatoes
2 cups roasted, peeled and chopped fresh green New mexican chilies
    1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
    1/4 teaspoon cayenne pepper
    1/2 teaspoon mexican oregano
    1/4 teaspoon sage
    1 pinch cumin
1 big can (32 oz?) chicken broth

    Instructions

Heat olive oil in 4-quart Dutch oven with cover.
Add pork and cook until lightly browned.
Add onion and garlic and stir with meat.
Add flour and stir 1-2 minutes.
Add tomatoes, green chiles, salt, and pepper.
Add broth and lower heat to simmer.
Cover pot and simmer for 1- 1 1/2 hours until meat is tender.
    Serve with flour tortillas.

I can't stress enough that you don't want to use canned chiles. If you can't get chiles from New Mexico, you can roast your own Anaheim chiles on the BBQ or using a propane soldering torch.

No, as I said, 6-7" across. Imagine trying to hold a 7" firehose. Crazy dangerous and stupid.
