I bet the French has influence on the Vietnamese cuisine because of their historic involvement in Vietnam.
Well, I think in this instance it's more localized. The Point in Biloxi used to be heavily populated by Frenchmen. Then the Slavs came in....now, the Vietnamese inhabit the point. All of them inhabited the Point bc of shrimping.
