I'm a big fan of seafood, but have never had any type of seafood stuffing or dressing. I really need to try it.
Actually when I like a seafood dressing, it is in a baked mirliton or bell pepper. I'll stick to cornbread dressing for bird stuffing.
We usually get one for Thanksgiving and Christmas. I get mine from Chris' Specialty meats on Millerville (other locations in Greenwell Springs, Zachary, and Prairieville). They are expensive but spiced just right. Their cornbread dressing is quite spicy. You can get it with a crawfish or cajun pork sausage dressing as well. All good stuff. Well, been there done that. We all decided that it tasted fine, but it didn't hold together well at all. There was probably 2 inches of liquid in the roasting pan that I am convinced was exacerbated by the shrimp and mirliton stuffing. I talked to the guy who made it and he admitted that the ones with cornbread stuffing held together pretty well and the seafood stuffing ones, not as much. Thanks for the heads up dude! We would have been better off doing all of those birds separately. Oh well, live and learn.
as i said overrated. and yeah the seafood obviously creates a lot more water. oh well, nothing like pissing away 80 bucks. at least you arent frugal and worry about such things.
yep. Why didn't I listen? That thing was floating. No wonder it wouldn't stay together. I've saved enough on ice to make up for it.
Because one man's overrated is another man's delicious. You needed to try for yourself. Nothing is better than cornbread dressing in a bird. Oyster dressing on the side.
