    There ain't no "Roo" in a north Louisiana redneck kitchen. There are about 10 kinds of gravy, however . . .

    Uncle Albert didn't care for rice.

    Mom made a pretty good beef stew with a little flour mixed with water as a thickener.

    I never thought about how it was spelled. My Grammaw made a great duck gumbo but if all she had was pool doo she made gumbo out of that.. Very tough meat and not very tasty. I stopped shooting them because I didn't want to have to eat them

    I disagree. Poule Deau (water chicken or Coot) eat vegetation, not fish, so the meat is not bad. Only the breasts should be eaten though. Try them in gumbo with a good fresh (unsmoked) sausage and add a pint of oysters just before serving.
