For those of you who've followed this from the trapping through the cleaning, here's the end product.
In a brown gravy I like guinea a lot but the dark meat on turtle tops it. One of my finicky eating teenage daughters was sitting on her car outside, on the phone. I handed her a sliver of meat as I walked by. She tasted it and said how good it was then asked what it was. When I said turtle she tossed the other piece. I said, "Oh hell no girl, YOU LIKED IT." :lol:

Set out my nets yesterday. I had one net full of bream. Meant to take picture but was in a hurry to get them in cage to keep alive for bait at the river. One trap had 20 strippers/cooters. The place I caught them is a clean up job a guy asked me to do in his pond so, as you can see bullet holes....they must die. I did have two in one net. Only other time I ever caught snapping turtles in my nets, I had two also.
