Goat on the pit is my fav too. Turtle has dark and white meat. The neck is pretty white meat. Taste is pretty unique. It is better than but along the lines of guinea.
The alligator snapping turtle's head is so heavy you'd almost have to try to get bitten but I handle them all with respect. When carrying them by the tail I am mindful to kee my hand away in order to not let them reach my leg.
