I like both with red beans and/or a sausage sandwich but the one we get around here is freshly made, smoked and not ground so fine and it's awesome!
Speaking of brisket, I cooked one b4 the Saints game, browned it and then braised it in beer (Abita Amber ) and beef stock. Very nice. If you are ever in Breaux Bridge stop by Rees St. Market (formerly Champagne's) and get their fresh pork sasauge (cherise). Best in a gumbo put I put it on the grill as well. While you are there get the boudin, best in the world. Try the chicken sausage at Champagne's in Lafayette ( in the Oil Center). Delicious grill or taken out of casing and made into paddies, a staple at our tailgate. I'm making myself hungry !
Yeah, I've bought from Cajun Grocer before. There prices are not too bad and costs about the same as the "andouille" they sell in the supermarket by me in Dallas. I quote the andouille because it's made in Wisconsin I just couldn't believe 26 bucks for a pound of sausage on Folse's site. That's crazy.
Red since you're in BR you might try Ronnie's on Florida Blvd by the old Broadmore Theatre. His origional shop is in Opelousas and he makes good boudin and cracklins too. Another really good place is Bourque's in Port Barre.
