    Cherry Filled Crescent Rolls

    My cousin used to make a similar dessert when we were camping, so when I found this recipe in the "Busy Woman's Cookbook" I couldn't resist it! It's so simple and yummy!

    ingredients:

    1 (8.00 count) can crescent rolls
    1 1/2 cups cherry pie filling
    1/2 cup confectioners' sugar

    directions:

    1. Unroll crescent rolls.
    2. Place 2 Tbsp cherry pie filling in center of each roll; roll up dough.
    3. Bake according to directions on can.
    4. Sprinkle with confectioner's sugar.

    To Die For Crockpot Roast

    Got this one off of Recipegoldmine.com. It's all the rage there so I thought I'd try it. Amazing flavor, and so simple! No salt needed here, in fact, you may wish to use half the Ranch dressing mix to cut back on the saltiness.

    ingredients:

    1 beef roast, any kind
    1 package dried brown gravy mix
    1 package dried Italian salad dressing mix
    1 package dried ranch dressing mix
    1/2 cup water

    directions:

    1. Place beef roast in crockpot.
    2. Mix the dried mixes together in a bowl and sprinkle over the roast.
    3. Pour the water around the roast.
    4. Cook on low for 7-9 hours.

    Granny's Banana Cream Pie

    ingredients:

    3/4 cup sugar
    1/3 cup all-purpose flour
    1/4 teaspoon salt
    2 cups milk
    3 egg yolks, lightly beaten
    2 tablespoons butter or margarine
    1 teaspoon vanilla extract
    3 medium firm bananas
    1 9 inch pie shell, baked
    whipped cream or Cool Whip
    sliced banana

    directions:

    1. In a saucepan, combine sugar, flour, and salt; stir in milk and mix well.
    2. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil; boil for 2 minutes.
    3. Remove from the heat.
    4. Stir a small amount of cream mixture into egg yolks; return all to saucepan.
    5. Cook for 2 minutes, stirring constantly; remove from the heat.
    6. Add butter and vanilla; mix well; allow to cool slightly.
    7. Slice the bananas and place evenly in pastry shell; pour cream mixture over bananas.
    8. Cool; before serving, garnish with whipped cream or Cool Whip and bananas.
    9. Refrigerate any leftovers.

    Irish Stew

    This is comfort food. Serve with Irish soda bread and a mix of carrots and peas. This stew can also be cooked in a crockpot, layer the same and cook on low for 8 hours.

    ingredients:

    2 lbs boned lamb or beef, sliced, 1/4 inch slices (Lamb is traditional)
    2 lbs peeled potatoes, thinly sliced (a mandolin slicer works best)
    3 large onions, thinly sliced
    salt and pepper, each layer to taste
    2 tablespoons fresh parsley
    1 teaspoon chopped fresh thyme or 1/2 teaspoon dried thyme
    13 ounces water

    directions:

    1. Trim the meat, leaving a little of the fat and slice.
    2. Season the meat and veggies with salt, pepper, 2 teaspoons of parsley and the thyme.
    3. Layer the potatoes, meat and onions in a large casserole, starting and finishing with a layer of potatoes.
    4. Add the water and cover tightly.
    5. Cook in a preheated oven at 275 degrees for 2 1/2 hours, shake occasionally to prevent sticking, and check liquid now and then.
    6. Do not add unless absolutly necessary.
    7. The potatoes will thicken the finished stew so it should not be too runny.
    8. Just before serving, remove lid and brown the top under a hot broiler and sprinkle with remaining parsley.
    9. The potatoes on top should be nice and brown and crisp.

    My Favorite Chocolate Chip Cookies

    Get a glass of cold milk ready! This has been my favorite chocolate chip cookie recipe of all time, found in a Betty Crocker cookbook years ago. Once I made it for my HS Latin class and it became a class tradition and a family favorite...Thank you, Betty!

    ingredients:

    2/3 cup shortening
    2/3 cup butter or margarine
    1 cup sugar
    1 cup brown sugar, packed
    2 eggs
    2 teaspoons vanilla
    3 cups flour
    1 teaspoon baking soda
    1 teaspoon salt
    1 (12.00 ounces) package chocolate chips

    directions:

    1. Cream shortening, butter, and sugars in large mixing bowl.
    2. Blend in eggs and vanilla.
    3. Combine dry ingredients and add to butter mixture.
    4. Mix until well blended.
    5. Stir in chocolate chips.
    6. Drop by rounded teaspoon onto ungreased baking sheet (s).
    7. Bake at 375 for 7-10 minutes, until golden brown.
    8. (I like chewy cookies and if you do too, adjust the baking time accordingly.).

    Oprah Winfrey's Deviled Eggs

    Best I've EVER had!!

    ingredients:

    12 large eggs
    3 tablespoons mayonnaise
    2 tablespoons mustard
    1 tablespoon minced sweet pickle
    1 dash Worcestershire sauce
    salt & fresh ground pepper
    1 dash lemon juice
    1 dash horseradish sauce
    1-2 dash Tabasco sauce
    2 tablespoons chopped parsley
    2 tablespoons paprika (garnish)

    directions:

    1. hard boil eggs.
    2. cut each in half lengthwise.
    3. remove yolks and place in bowl with all other ingredients.
    4. mix well.
    5. spoon into egg whites and sprinkle with parsley & paprika.
    6. cover and refrigerate at least one hour or more.
    7. serve chilled.

    Easy Snickers Bar Pie

    This recipe is so easy. Make it to take to a potluck and keep one at home for yourself! The cook time mentioned is the chill time in the fridge


    ingredients:

    8 ounces cream cheese, softened
    1 1/2 cups powdered sugar
    1/2 cup creamy peanut butter or chunky peanut butter
    3 regular sized Snickers candy bars, chopped
    16 ounces Cool Whip, thawed
    2 (6.00 ounces) chocolate cookie pie crust or graham cracker pie crust

    directions:

    1. In a large mixing bowl, beat cream cheese, sugar and peanut butter until creamy.
    2. Stir in chopped candy bars.
    3. Gently fold in the Cool Whip just until mixed.
    4. Pour into crusts and refrigerate overnight.

    Italian Beef Patties with Balsamic Cream Sauce

    Boston's North End is famous for it's Italian markets, restaurants and saint's day weekend festivals and I miss it so much! I was thrilled to find "The North End Italian Cookbook" by Marguerite Buonopane.

    ingredients:

    1 lb ground round
    1 cup freshly grated parmesan cheese
    2 egg yolks
    salt & fresh ground pepper
    2 tablespoons butter
    1/4 onions, thinly sliced
    1 tablespoon olive oil
    1 tablespoon butter
    1/2 cup heavy cream
    1 tablespoon balsamic vinegar

    directions:

    1. In a medium bowl, mix together beef, cheese, egg yolks, salt and pepper and form into 6 patties.
    2. Heat 2 tbls butter in a heavy skillet over medium high heat, brown patties on both sides, reduce heat to medium and cook until juices are pink.
    3. Remove patties and cover with foil.
    4. Add oil, 1 tbls butter and onion to the pan and cook over medium heat until onion is golden brown.
    5. Add cream and vinegar and cook on low 2 minutes.
    6. Pour sauce over patties and serve.

    Melt in your Mouth Banana Bread

    I looked for years for a banana bread recipe with the right texture. I finally modified my favorite pumpkin bread recipe and came up with this and finally got what I was looking for, for so long.

    ingredients:

    2/3 cup oil
    2 large eggs
    1 cup mashed, ripe banana
    1 cup flour
    1 cup sugar
    1 (3.38 ounces) box French vanilla instant pudding
    1/2 teaspoon salt
    1/2 teaspoon baking soda

    directions:

    1. Mix oil, eggs and mashed bananas.
    2. Combine remaining ingredients and add to banana mixture.
    3. Bake in a 9 x 5 x 3 inch pan at 325 degrees for 1 hour (if you are following the recipe, there is no need to grease the pan.)

    Crockpot Cola Ham

    A popular, easy, and flavorful way to cook a small ham for the holidays, a dinner party or to have ham for sandwhiches, soups or casseroles.

    ingredients:

    3-4 lbs fully cooked boneless ham
    1/2 cup packed brown sugar
    1 tablespoon mustard
    2 cans Coca-Cola

    directions:

    1. Remove ham from packaging.
    2. Lightly score ham in diagonal lines first one way, then crosswise, to form a diamond pattern, being careful not to cut any deeper than about a eighth of an inch.
    3. (You can score both sides if you like) Make a paste of brown sugar and mustard (I used Boar's Head Honey Mustard).
    4. Rub paste into ham on sides that have been lightly scored.
    5. Transfer to crock pot.
    6. Pour in two cans of coca cola into bottom of pot, not pouring directly over ham to wash away brown sugar paste.
    7. Cook on low 7-8 hours.
