Pickles

    Anybody make their own pickles? I got some pickled mirlitons from the Mandeville Trailhead Market a couple weeks ago. They are really spicy which I love. I was talking to the lady who made them, asking her a bit about the process. In essence, they make the brine and pour it into the jars that have the raw mirliton wedges in them. They fill it to the top, screw on the top and let them sit for 6 weeks.

    For canning, I thought you had to put the jar and contents in boiling water for however long etc, but they don't do any of that. They do wash the new jars in the dishwasher before using them, but that's about it.

    Anybody here make their own pickles or pickle other stuff? Got any good recipes?

    I have but man o man does this thread scream out for Cajun Sensation.

    I didn't boil my jars after.

    :D I've been trying to draw him out w/ several old Sportsman's Paradise threads, but that bastid is laying low for some reason.

    Nah, it's been several years since I've done it. Buy a pack of Mrs. Wages at wal mart and follow it. I highly recommend her salsa too. I still do a lot of that with my tomatoes. I put up one jar for each Saturday of college football. THAT has to be boiled.


    Dude's a major playa. The ladies literally throw their panties at him. He goes to the neighbor's to borrow some sugar and disappears for 3 days.

    Every time I've made pickles, they've always turned out mushy when heated. When kept cold, they had a better chance of staying crisp. Last summer I pickled some okra from my garden and I think I ate two jars worth in about two days.

    Also using a "Pickling" cucumber and fresh, "hard" pickles as opposed to some that have been in refrigerator. I also think we would add tumeric to keep them crisp- for okra too. Check on that before doing it though, I'm not positive.
