Some purists make dirty rice with ground liver instead of ground meat, but I won't even come into a room where liver is being cooked, much less consume liver. Still, some folks like it that way.
Yes, I know. My very Cajun grandfather was known to do this. I always had to ask. But no one could make a roasted turkey like him (he'd owned a restaurant at one point.) I once wrote a column for The Dallas Morning News about the experience of standing beside him carving our turkey on Thanksgiving days. We don't do turkey anymore for any of the holidays, though. My husband likes ham, so my mom will make that. This year, the poultry of choice will be Cornish hens. There will, of course, be cornbread dressing! For Christmas the past five or so years (always up here in Texas), we've had pork tenderloin. It's safe to say that's our tradition now.
