I'm from out of town and I have NO idea what dirty rice is. :rofl: Do I want to know? Before dinner try this: Store bought ravioli with whatever filling you like Dip in buttermilk Roll in breadcrumbs Fry in olive oil (regular, NOT virgin)
It's a mixture of rice, seasonings and ground meat. Nothing to be afraid of. I'm not a fan or cornbread dressing so I make this. I've have fried ravioli at an Italian restaurant before. Very good.
We have oysters, shrimp, crawfish, catfish, speckled trout, alligator, frog legs, garfish boulettes, etc...Don't need to fry no stinkin' ravioli. :hihi:

Here ya go Cali. Batty, when you make your rice dressing, make sure there's a pretty good bit of water in the dressing meat, not only while you brown it but up until the rice is to be added. It keeps it moist/flavorful. Also, don't cut your green onions ("Onion tops" whatever they're called....shallots maybe?) until you're ready to add the rice and mix it up. When you add the rice & green onions, cut the heat and cover. I brown the dressing meat ahead of time, turn it off- I heat it up right before the main dish is ready to serve and it's till warm. You can cook the rice 30 minutes ahead of time and it'll stay warm.....provided you rice cooker has a "Warm" switch.

Properly prepared (read: search TF for recipe or tips) and it's an unusually good thing to eat -- especially if you don't have much money to spend on ingredients. I think I ate dirty rice at least three times a week growing up. Ironically, I only make it now for "special" occasions. Funny how things sometimes get flipped around like that I guess.

vball, they have dirty rice at Popeye's. Try it- it's awesome. My husband's grandmother makes some just for me on Thanksgiving. I was so touched when she did this because she cooks for 20+ people. That's a Cajun grandma for you! I'll get a recipe for my grandmother's (Mimi's) Pumpkin Chiffon Pie. It's amazing. It's made with Gingersnap crust. Holycrapit'sgood! We have turkey or turducken Rice Dressing Cornbread Dressing Salad Wine Bread Beer Cranberry Sauce more Wine Wine Sparkeling Wine Desser...frick it, Bailey's on ice In one week we will be rolling in to Lafayette for some Thanksgiving goodness. Then I'll literally roll out of Lafayette to BR for the Arkansas game. Where I'll eat and drink a lot more. Then we'll go meet friends on Saturday at the Chimes. Where, yea you guessed it, I'm gunna eat and drink. Happy Turkey Day everyone!
I have a box of recipes from my great aunt and, no lie, on one of the cards, the directions say to (after adding the ingredients) "beat the dickens out of it"!! It cracks me up everytime I see that one!
