Yes, conventional wisdom is 5# of crawfish per person. Having said that, no way that will cover it with my family, I ususally go 7# per person. Throw in some smoked sausage with the corn and potatoes, that usually goes over well with the newbies. Fried some "shrimps" last night. Marinated them in beer for an hour and then coated them with mixture of half flour and half corn meal, seasoned the marinade and flour mixteure with "kicked up" Tony's. Damn good, we wiped out every last tail. "Tonair mais ca cest bon!"
Or, we eat them so fast here that we're overstuffed by the time it registers in our stomachs. But a little beer and loosening the belt and I'm good.
believe it or not, i just had bugs for an early dinner. i got 5 pounds, and sucked those down pretty quick. i started eating as the horses were being led to the gates for the preakness and finished during the trophy presentation. i only got 5 pounds cause i had a late lunch around 2, and this was an early dinner. there was a grocery store here doing a crawfish boil. i swung by there to grab something while out running errands and saw they were having one. needless to say, being in oklahoma, i was VERY skeptical how they would be. i walked up to the wagon they were boiling from to check it out and i saw the guy doin the boiling wearing an lsu hat and t-shirt! needless to say, that made me decide to try them! turns out he was a guy they brought in from louisiana to do this. they werent bad, but not the best i have had. some were a bit over-cooked for my taste (tho not at all mushy) and i would have preferred a lot more spice. no lip burn at all. i dont know if they were toned down for okies, or if that is this guys style. i could get much better down there, but they were pretty good for up here. scratched that itch.
Cooked 104 lbs yesterday afternoon. we had about 10 lbs left over. Got two sacks for $1.20 per lb, and one sack for $1.50 per lb. Not too shabby
Sausage, potatoes, mushrooms are all seasoning theifs. I boil these in a different pot. Corn, lemons, butter I will boil with the bugs.
I bought 6 sacks Saturday. 2 of them were all dead. So I had to go get another 2 sacks. Ugh. Price in Morganza is still $35 a sack 35 lbs. Price in BR was a bit more $50 a sack for 35 lbs.
My wife is part of a running club. One of the runners hosted a season ending (they'll start running races again when it gets cooler in the fall) crawfish boil this past Saturday.. He is a nurse but crawfishes for extra money on the side. His pond is right next to his house! He kept telling us to eat because we'd never run out, all he'd have to do is go and pick up some more traps!!!! I hurt myself!
We went to Ray's two weeks ago, and paid 1.29. They had some for .89 but they were smaller than my pinky.
