Man vs Food

    Not sure, I think it may have to do with it being very Piquante. The original recipe contained only fresh shrimp, butter and LOTS of black pepper. The ruddish color comes from the shrimp shells (iodine). thats what makes Roseate Spoonbills and Flamingoes pink. They eat crustaceans buried in the mud.

    I agree but you missed the part where I asked him why Mr. B's BBQ shrimp were better. Based on a group of us customers having tried both versions.

    I have quite a few chef friends who follow the same principal.

    I meant absolutely no disrespect to him at all, I was just pontificating because this issue happened to come up today at my place. One of my good customers was kind of running down another chef - and he was one himself. So I kind of just gave that lecture to my young assistant in private. I can see I didn't come across clearly in that post. I do bet that I'd like the bbq shrimp are better a Mr. B's than my place.

    Most of us in NO, at one time or another passed through the Brennans kitchens. If you're not hard core you end up washing out sooner or later. Your friend sounds like a real good one to me. He's right, they use only the best and freshest ingredients. You wont get frozen shrimp there very often. That's why I ended by saying how confident I was that I'd love those BBQ shrimp. In fact, now I really want to go there and order some myself.

    A lot of real good chefs (even famous ones) are big time into the comparison game. It reminds me of pre med majors at LSU comparing test grades. You need huevos to do this for a carreer. It's tough physically and mentally, especially as you get older. What I thrive on is serving people more than the ego thing. I bet it's the same for your friend. :)

    soooo... ya think Bryce Brown will be a tiger?

    to continue the hijack and thought (sorry peabody)....

    i am not a professional chef my any means. i am just someone who absolutely loves to cook. i consider it a creative outlet. but what i love most of all is cooking for others.

    i get great pleasure from spoiling those i care about by cooking for them or with gifts of food. a dear friend once told me that is why i was a good cook. because i put my heart and love into what i cook/bake/make for others.

    so anyway, just had to comment because that statement struck a chord with me. next time i am in nola i am gonna have to make a trip to the north shore to meet you and eat at your place!
