Very little trans-fats are found naturally. You used pure pork lard, a saturated fat, which is bad enough of an artery clogger. But trans-fats are created by manufacturers to make a thicker oil out of vegetable oils -- like Crisco for instance. It makes for a longer-lasting product that tastes better (some believe) than using non-saturated vegetable oils. But . . . trans fats have been found to be even more heat-unhealthy than lard. New unsaturated fats are being developed to replace trans fats in ordinary cooking applications. Lots of us have been ingesting them for 50 years . . . and it kills a lot of us.
