very easy and good. you can serve this with a side of pasta of your choice along with either fresh italian or french bread. adding cream is optional (this dish is often prepared without the cream). you can also add crushed red pepper to spice it up. ITALIAN SAUSAGE WITH GREEN PEPPERS AND ONIONS 3 lb. mild (or hot) Italian sausage 1/4 c. olive oil 2 med. onions, sliced 3 green peppers, peeled, seeded & cut into 1/4" strips 1 tbsp. oregano 1 tsp. basil 2 cloves garlic, chopped 2 c. canned, crushed & peeled Italian tomatoes 1/2 c. dry sherry 1/3 c. heavy (whipping) cream, optional Step 1: Place sausage in large skillet with 1/2 inch water in bottom. Cook over medium heat until water evaporates. Add olive oil and saute a few minutes until browned on all sides. Step 2: Remove sausage and add onions and green peppers. Season with oregano and basil. Saute until onions are golden brown. Add garlic and cook 1 minute longer. Add tomatoes. Simmer 5 minutes. Step 3: Add sherry and cook over high heat until sherry is absorbed. Add sausages to sauce during last 2 minutes. Add cream, mixing well. Makes 6-8 servings.
