My Grammaw was from way down Bayou Dularge below Houma and she ain't never put no tater salad in her gumbo neither. She made great potato salad too but never served it with gumbo. That would be like putting ketchup on a peanut butter sandwich.
I love tater salad and I love gumbo. No way on earth would I mix them. It would be like putting mayonnaise in your grits.
having gumbo without potato salad is a mortal sin, no doubt....and you certainly have your coonass card taken away from you I never have dumped my potato salad in my gumbo, however. I'm burnt the hell out on gumbo. I think we had it at least twice a week when i was growing up. And potato salad is fucking nasty.
That coldass potato salad that was served with every family gathering was going to the dog for me. My mom just quit trying when my automatic gag reflex started kicking in. And putting potato salad on top of rice in a gumbo is just overkill.
