I have that same problem sometimes. Of course the people eating are not going to say anything bad about the food for fear of not getting any again. I just wish people would tell me what it needs when I ask them.
Upon reading other threads about red beans and rice, would anybody here recommend using deer sausage in your recipe? I have been summoned by the inlaws to cook something "cajun" for thanksgiving and they want red beans and rice. Every other time I have made it, I just use some sort of store bought smoked sausage and it comes out pretty good. Now, I have killed 3 deer this year already and have a good bit of sausage. Would the venison be too overpowering for the red beans or not? Of course I wanted to make dirty rice, but couldnt talk them into it.
Never had r n b n w with fresh sausage. I say go for it. Let me give you my ultimate "cajun" thanksgiving recipe: Lump crabmeat cornbread dressing. My inlaws make it every year.
The key here is that they requested that you make something cajun. This is the perfect opportunity to test this. If it sucks, they asked for it so they can't complain. Carpe Diem!
