We were right next to the ocean. Only problem is Haiti has no food inspection. and apparently no refrigeration on their boats. As to crawling to a baseball game, there would have been no way. I couldn't even get to the toilet on my own.
as the green one pointed out so tactfully, we werent! and i will add "dont go to haiti" on my list of lessons.
Even when 160 was the norm for pork I couldn't do it. I would cheat it down about 5 degrees. It just tasted bad at 160. Now with the new regs it's all good. Pork is much juicier and fantastic. May cook a tenderloin tonight now that I'm thinking about it.
I'd eat bad seafood before I'd travel to Haiti. You did both, were you suicidal at the time? You're lucky you are around to tell the story.
It was in 1978 for a youth mission trip. It was a real eye opener to the plight of people outside of my little world. I went to Jamaica the next summer to put a new roof on a church. Pretty neat opportunities.
We have had very good luck buyin a Boston Butt, trimmimg the fat, and cooking low and slow inside the oven in one of those cooking bag. We put some sauce in the bag, and let it go at 325 for 5 or so hours. Chopped makes a great sammie. Good luck.
