And that's fine, but why do you like it cold? Does it really taste that much better than warm/hot or is that just a personal preference?

I like a hot pink center. I want a steak to be hot! Hot off the fire, onto a warmed plate, and straight to the table. The best steakhouses have someone bring your steak straight from the chef to your table. No sitting under the lights until your waiter happens by to pick it up.

And if you have to put steak sauce on it, it's not cooked right.

One of my dad's friends, when asked how he wanted his steak, would tell the waitress, "Cut off the horns and wipe the azz".

Ah c'mon. I love vanilla ice cream but there's nothing wrong with a little fudge or strawberry over the top. ;)

It is just my preference. I like the contrast in texture from the seared outside to the practically raw inside.

No way dude. The best steakhouses let a steak cut rest for several minutes after it comes off the heat. If you serve it too quickly the juices stay on the outside of the steak and are lost when you cut into the steak. If the meat rests the juices return to the center and the meat is much better. Even shitty Outback steaks sit for five minutes before they are served. A steak at Ruth's Chris or Doe's sits for 10 minutes.
