    lemon-herb turkey breast:

2 lbs turkey breast -- can be up to 3 lbs
    1/4 cup lemon juice
    1 teaspoon rosemary
    1 teaspoon oregano
    2 tablespoons dijon mustard
    1/2 cup dry white wine
    salt and pepper to taste
    2 cloves garlic

put all ingredients (turkey skin-side down) in crock pot (or a big sauce pan like a dutch oven on the stove) and cook on low heat 6 to 8 hours, basting turkey periodically (like every hour). this renders down so tender its awesome.

I usually cook turkey breasts in a crock pot. Cut up a bunch of garlic cloves and stick holes in the breast all over and stuff the garlic and a peppercorn in each hole. Inject with a cajun marinade and pour a beer into the crock pot. Add 1 cup of your favorite barbecue sauce, a healthy dash of worcestershire sauce, a half cup of Heinz 57 Steak Sauce and cook on low heat until the meat starts to fall off the bone.

Its the tenderest turkey I have ever tasted.

you can't go wrong slow cooking anything. i've done poultry, pork, and beef and the results are always the same no matter what you throw in......excellent. and the best part is you just let it be and do its thing.
