1. kinda the same with burgers but you cant burn em or they are ****ed (which can happen rather quickly on an infrared grill).

  2. Just something else to wash, for a maxmum-slack kind of feller like me. I can make four perfect patties with my hands quicker than you can find that thing in your kitchen gadget drawer.

  4. A handful of finely diced onion, garlic and bell pepper with ground pepper, salt and fresh, home-ground chuck roast is the usual recipe. I try to pick one out that's well marbled and without huge chunks of fat.

  6. there's no marbling in ground meat. it's either fat or its not.
  7. poke a hole in the center of the patty before you throw it on. Yes, like a donut. Don't worry, it will close and the patty will cook more evenly than ever before.
