There are 3 types of gumbo: 1. Gumbo 2. Okra Gumbo- lots of people love it but an equal number (myself included) cannot stand okra in any way shape or form. 3. Green Gumbo - As referenced by Hatch. Pauls Pirogue in Carencro has Green Gumbo on the menu. In a shrimp stew, the berled eggs are the best part. Old timers crack the egg into a simmering pot of stew but I prefer to boil and peel them and dump 'em in. Also, as Hatch alluded to, the eggs were added as a stretcher because times were hard and there was no such thing as food stamps.

Gumbo-like soup--to keep the kids and Yankees happy 3. Greens Gumbo--My Dad also made depression food for us to eat when I was young. This one was particulary nasty. But it was better than the turnip soup or the cornmeal mush.
I can stand scrambled eggs, but I want nothing to do with boiled or fried eggs. It must run in the family, my mom and uncle can't stand them, either.
