I don't eat sushi and it doesn't go with tacos anyway. The point is....soft corn taco, seasoned meat (I prefer carne asada or carnitas), queso fresco, cilantro, onions, tomatoes if you like them, squeeze of lime, and avocado.
I'm pretty sure it's illegal to live in Texas and not love fajitas. Sure, some are run-of-the-mill, but I would argue that the combination (steak and chicken) fajitas at La Hacienda Ranch (home of the original frozen margarita) and Uncle Julio's are some really good eating. Of course, some of the best Mexican food I ever had was in the Central Valley of California on the way back from Yosemite to a ranch where I was staying. It was from a roadside taco stand that only sold soft corn tortillas and shredded beef. So good...
Georgia. I'm sure they can be quite excellent. I have zero experience eating them in Texas. Exactly. Today's roach coach with the simplistic soft taco is akin to brilliant cuisine.
The best street vendor tacos are in Ensenada on the Baja pacific coast. Fish tacos, hot and fresh. Just be sure to put the salsa on them, the vinegar in it kills the bacteria. NEVER add that mayonnaise that the Mexicans put on them. That crap sits in the sun all day.
I was there on Saturday night. Gotta say they are the best I've had. When it comes to Mexican food, I like less the tex-mex and more closer to the Caribbean style.
