    Been up for an hour and the pit is cranking. A 70lb oinker getting ready to get it's game on! Geaux Tigers!

    No, a neighbor from Texas has a huge trailer smoker that he brought over. It was awesome! Apples from one of our trees...

    Finished product...There were 4 large chicken breasts covering thin spots that went into the gumbo. They were freaking awesome!

    Nice. Every conchon du lait I've ever been to was out in the country on somebody's land that didn't mind having a pit dug on the property. That's why I was wondering. I figured if you live in upstate New York you were either in a town or a suburb.

    We are definitely out in the country. Upstate is mostly farming and rural. I would have dug one if my buddy didn't have that mobile pit. Here is what we did until we started cracking open the beers: Trap shooting with a golf ball or two mixed in. I cut a "green" out back for folks to chip at after the guns were secured.
