VERY true...those onions are unbelievable. Mushrooms too. Man, I could go for some of those too. Just not in with the crawfish. :hihi:
The mushrooms really soak up the pepper, though. Whew! A friend of mine always puts mushrooms, artichokes, whole garlic bulbs, and celery stalks in with the crawfish, corn, and potatoes. He keep bowls of melted butter out on the table to dip them in. Finest kind!
