    Do those have bones in them? Looks like it. When I clean a dove, I just pop the breast out. Alot of people keep the heart and eat it, but it ain't that serious around my crib. My son and I hammer the shit out of doves. We are opportunists...when we see one outside, he goes and gets the gammo and we hammer it, I clean it and throw it in the freezer. When we get about a dozen or so, I'll cook them on a rainy afternoon. He loves it.

    Yes they do. Ordinarily I would be in tune with your procedure. I cut the wings off of ducks so they'll brown better. For the little bit of meat on their wings I figure I'll just throw in another duck if I need more meat.

    On the doves though, their skin is very sweet & tasty and helps make the gravy by what "sticks" to the pot.

    Used to keep the hearts and even cleaned the gizzards. Stopped though cause the way I "brown" things there was not much left to these from being drawn up.
