Agree. I typically make gumbo & jambalaya and if I don't have jarred roux I make the roux in the microwave. Works fine for me. I have lower back issues & there's no way I can stand in one spot that long to make the conventional roux.

well i was born and raised in Shreveport / Bossier and my family settled with the cajuns back in the day. Kin to Governor of Louisiana at end of Civil War. City named Lecompte named after my ancestor racehorse.His likeness is etched in Elavator doors in Capitol. My dad has a book that tells story of Govenor being the second for Jim Bowie on the banks of the Mississippi. My great grandmother used to babysit who was the Govenors grandaughter. If im not from Louisiana then neither are you. I know you guys from the south part think La. starts and stops with you but no offense ive met some of the cajuns per say and they remind me of my family in arkansas.. My Dads grandmother on his Dad's side was full blooded Indian. So all of you move back to France or Nova Scotia and get off my Land LOL
Hope everyone is doing ok through this winter storm, its freaking nutz here in Houston area. I would say about 70% of the houses in my neighborhood have busted pipes, and some have catastrophic damage to their houses. We were lucky to only have pipes over garage go so far.
It's currently 25 here in CO & snowing. About an inch on the ground already. Low of 11 forecast for tonight & a high of 26 forecast for tomorrow with a low of 5 tomorrow night. Brrrrr!!!
