The French Quarter is a tourist trap but outside of that there are a lot of real people in the NOLA area.

 

To be fair its prob more south I-20. I mean heart of acadiana runs due NW along 49. Or is this where the marsh cajuns and prairie cajuns square off? :/

 

Can you really tell the difference between made roux & roux in a jar? I prefer roux in a jar or microwave roux because they are both a hell of a lot quicker & more convenient.

 

Only cajun dish with tomatoes is sauce piquant. Just is. Everything else is creole.

I couldn't tell the difference because I never had roux from a jar. I was raised right

I'd bet more than a dollar that roux in a jar wasn't available when you were raised.
