My wife has prepared several recipes from John Folse's Encyclopedia of Cajun and Creole Cuisine and it never disappoints. There is a dish with okra and black eye peas that is absolutely declicious. A little pricey but worth it: The Encyclopedia of Cajun and Creole Cuisine

i am so mad. i have torn the house apart and cant find my vernon roget cookbook anywhere. i guess im gonna have to go through all my cookbooks again. i hope i can find it.
I have a ton of cookbooks, but my favorite is Cajun Cuisine. It is published by Beau Bayou Publishing Company out of Lafayette. It is generally my cookbook of first resort. It has terrific authentic Cajun recipes. My favorite is the one for fish courtbouillon. Honorable Mentions: River Road Recipes, Vernon Roget's cookbook. Tips: Often you can find great recipes in cookbooks that produced and distributed for local consumption and not generally sold in bookstores. For example, a good friend of mine published a collection of his family recipes which is really good. Another lady I know published her recipes and recipes she obtained from friends. Neither of these can be found in bookstores, but offer some great ideas.
