    Those big dark juicy legs even come with a handle. Flavor and convenience, what more could you ask for?

    I eat it all, but the dark is so useful. I boil down de-boned thighs and drumsticks for stock that I use in m gumbos and ettouffees. I also think dark meat browns better in a jambalaya.
