    i went today. we tried the shrimp boudin, the pork, and the smoked. all were exceptional. the shrimp is my favorite. great texture, great flavor, great spice. i agree with boudinlink.com Pete's A+ - Jerry Lee A- (never thought i'd give a higher boudin grade to anyone over Jerry Lee). we also had a handful of those heart stopping (literally) cracklins - damn, that's good $h1t.

    Have you ever seen what Pappadeaux's tries to pass off as boudin? It comes out on a bed of white rice. My husband thought that's what boudin was when I first met him. He quickly learned the difference.

    My favorite boudin was the crawfish boudin from Tony's Seafood. And we may also need to bring a cooler with us...

    THE BOUDIN

    Price: .2.69 for 12oz.
    Presentation: Shrink wrapped in an industrial strength capacity. Found in the meat/sausage case.
    Casing: Thin and almost unbreakable. Reminds one of Tyvek.
    Rice/Meat Ratio: More rice than meat. It is marketed as a "rice, pork, and pork liver product".
    Texture: Gluey with bits of undercooked rice, lots of parsley, and small bits of seemingly processed meat.
    Spices: Mild
    Overall Taste: Not very good. A strong parsley flavor is present throughout the link. The tiny bits of pork are reminiscent of what one would fined in canned/pressed meat. It is hard to describe: Not offensive, but not especially tasty.
    Comments: The CORPORATION that makes this has a whole line of "established brands." Perhaps they ventured into unknown or unfamiliar territory when it comes to boudin. A Cajun stuck between Houston and San Antonio, somewhere around Flatonia, might appreciate this link.

    that is sad. but at least you have places you can run get boudin when ya gotta have some.

    im sitting here jonesing for some now, and there isnt anyplace to get it here. :bncry:
