If you didn't know before, this thread proves Louisianans love their boudin. How else can you explain a 19 page, 181 post on topic?

My sister-in-law's father brought in boudin from Legnon's in New Iberia for the Florida game. Brought in the Pork and Crawfish Boudin, Pork Skins, and Cracklins Damn good all around... On top of that we had braised and then fried gator arms and gator sausage and peppers. Might have been the best food we have had for a game.
One of my chums cooked for last saturday's TV game. The jambalaya and shrimp-stuffed Chile rellenos were excellent, but the major hit was smoked pork loin stuffed with boudin. Finest kind.
Goodness gracious Chossigo, all that sounds amazing! Couple of firewaters to wash all that down and there is no way I get off the couch......love Chile Rellenos especially, bunch of good places out here in Austin that serve em up good.
Call me crazy and unrefined....but I liked Papadeaux's when I lived out there. Not because it was authentic Louisiana cuisine, but because it wasn't bbq or texican.
The Boudin that French Press puts on their stuff in Lafayette is very good. I need to find out where they get it.
The Cajun Benedict (piece of boudin on bottom, fresh hot homemade croissant on top, two poached eggs on top of that and all covered with a little seafood gumbo is maybe the best meal ever) among everything else on their menu is the best food I've had anywhere, French Press=favorite place of all time......they also make very good Bloody Mary and the best sazerac I've ever had.
