    It's similar to a rice dressing ... pork mixed with rice, onions, garlic, seasoning, etc... then it's stuffed into a sausage casing. You can boil it, cook it in the oven, on the grill/smoker ... whatever you want.

    The best are boudin balls. Bite size pieces of boudin are breaded and deep fried.

    Not for the health conscious folks...
