Opelousas Roast Duck This recipe sounds really good. I'm not sure I could actually make it for game day. That seems wrong to me in so many ways.
We have ten million recipes that don't require their mascot, give her something more inherent to our local culture.
Do the Pastalaya, its too easy. I have a friend up in Seattle, I send her a package from La. all the time. Nothing but La. items. Talked with her a couple days ago, she ready for more stuff. She loves the Zapps Tater Chips.......
The cajungrocer site carries a good assortment of foods. You should be able to find something that sounds good from there. Good luck with the food not the game though(just kidding ). I would recommend some fried boudin balls/crawfish balls for a starter and the turduckens and stuffed chickens are great as well. :tigereye: Boudin | Delivered Fresh From Cajun Grocer Stuffed Chickens From Cajun Specialty Meats
Thanks so much for all the replies and ideas. I'm working on putting together a menu. Hopefully it and the Ducks will be successful.
that is a good idea. i havent had any cheese from moo u in a long time. my late uncle was a professor at moo u, and would bring us edam cheese whenever he would come to visit. i may have to have some, even if not the moo u variety, in his honor for the moo u game. thanks for the reminder! :thumb:
OK, here is a simple south Louisiana thing to do for a tailgate. Get a bottle of Pickapeppa Sauce. Nothing else will do. Pour it over a slab of cold cream cheese and put it on a platter with snobby crackers.
