Often do a smoked fish dip appetizer for folks. Smoke a rack full of specks, flounder white trout etc just whatever white flaky fish you catch season how you like em(whatever is in the cabinet.) once smoked stir fish up till it's totally shredding then stir in 12oz of cream cheese, little Tony's, lemon juice, and your favorite hot sauce until it's to a creamy consistency. Add in some finely chopped green onion and red peppers and make it a Christmas dish. Scoop it with captains wafers, club crackers etc. if no smoker can use baked fish with liquid smoke.
I had a bag of speckled trout filets a friend brought over for a fish fry. They were ove 3 years old and when I thawed them out I was skeptical about whether they were still good. I didn't have any Italian dressing but I had a bottle of some kind of creamy Caesar dressing so I used that to marinate the fish for a few hours. When I fried them they turned out to be some of the best tasting I ever ate and nobody got sick.
your palate is clearly impaired. but a stomach of iron to go with it. thats decades of 5 dollar buffets paying off.
I haven't eaten at a buffet in 4 or 5 years. The friend, along with 4 or 5 other people ate the fish too. Everybody loved it and nobody got sick. That's what I get for trying to share a bit of culinary expertise with you louts.
I'm gonna have to get jvs opinion of 3 yr old fish. I think that just means you hadn't had fresh fish in quite awhile.
JVS has never had even week old fish the way he talks about feeding everybody. If I had caught the fish they would have been eaten a lot sooner. The guy with the old fish got them out of his dad's freezer
