The books aren't dumb. If the line were to move to say LSU -14 you would see the price drop to something more affordable. Likewise, if you want to play Auburn you only risk $100 to win $175 I think it was. This tells me the house expects LSU to cover the 7, and they are going to make you pony up if you want to ride.
