You finish out the season. You care for your players, the people you made promises to, enough that you at least finish out the season before walking into the sunset. His "heart" wasn't in it because his team sucked. He even specifically says if they were winning he could still go for years. Because walking away mid season as your state is undergoing a catastrophe isn't hurting the program? He could have announced this was his last season, allowed them to start the coaching search early, and not leave the program in a state of chaos.

Being who he is Spurrier told them, "Well fuck you! I'll quit right now." Maybe some truth to that. I can't see him quitting in the middle of a season without some provocation.
