Go by a Honey Baked Ham store and pick up a ham bone or two. They are loaded with ham - I guess where the spiral cutter can't get to. It gives the red beans a great flavor and adds some good meat.
We mostly make gumbo or RB&R at home on Friday where all of our stuff is. Gameday is so crowded with people that its easy for someone to get burned and easy to burn the food, too. So we just heat it up over a gas burner at the tailgate site, quick and easy. Red beans may actually be better after a night in the fridge. You just have to be careful not to dry out the rice. Some corn bread and some diced green onions and you are in business.
Funny you mention the rice cooker.....I was in Costco yesterday, told my selfs, "selfs, you needs dat rice cooker and it keeps dat rice warm"!!!
