Most times a coach knows, its his job. I know, kind of ruff, a car salesman can tell if your gonna buy a car, he'd better, won't be in the profession for long. Most coaches can look in a kids eyes, if they look him straight in the face, an tell. They have done till all too long.
I was more generalizing about all the recruiting sites and people that have "connections". None of them know shit most times. It's all speculation. But yeah the coach better know if he's getting duped or not.
