Damn skippy. We are the happiest bunch around when it comes food and social hour, bar none. Go to any boil, boucherie (though dwindling in popularity) and it's food that sets the center of the table. Stick a can of tuna in the middle and you're just a pretender.

See, now we are getting somewhere. It is 100% about efficiency with absolutely no drop off in quality. Sure there are times when I say "I'm gonna make my own roux" those are usually when I don't have any savoies or carys left. And the end result is when I'm done it looks and taste EXACTLY like one I could have bought for a few bucks and saved myself lots of time and effort while sacrificing nothing.
