Get down south before you do. I've seen some turtle recipes on the net that made me want to puke. "Turtle soup"??? gimme a break. I brown the shyt out of it (preferably on an open fire in a "black pot") then add onions, bell peppers, etc. Also 1/2 can of rotel then water. After water is rolling I put about 1/2 TBS of roux. Put lid and let er rip. Watch so you don't lose the water and as it nears being done, let the water get down to the desired amount of gravy thickness you want. I wish we could swap out a meal. I would love one of those hot dogs they sell on the street around Times Square. I ate a heap of them when I went.
I've had very good turtle soup, always in south Louisiana, but it was really a fairly thick stew as you describe. Kind of like the thick gumbo that some people make.

Maybe it's erroneously called soup in some instances cause I've NEVER even heard anyone speak of turtle and soup in the same breath. Bout like them skitter bites you call tits. "Might" is the key word. This thing is now in the gulf and STILL not even a hurricane. Settle down.
I havent had snapper in a long-time, the softshells were just to easy to catch in poo-poo river... Lots of leg meat on dem.
Unfortunately Isaac is now on a track straight for NOLA. Everyone should pay careful and serious attention to the warnings. My prayers to all that are in the path of the storm. Hopefully this will be nothing more than a bump in the road with no serious damage or significant losses.
