Gumbo Discussion Last Night

    There are 3 types of gumbo:

    1. Gumbo
    2. Okra Gumbo- lots of people love it but an equal number (myself included) cannot stand okra in any way shape or form.
    3. Green Gumbo - As referenced by Hatch. Pauls Pirogue in Carencro has Green Gumbo on the menu.

    In a shrimp stew, the berled eggs are the best part.
    Old timers crack the egg into a simmering pot of stew but I prefer to boil and peel them and dump 'em in. Also, as Hatch alluded to, the eggs were added as a stretcher because times were hard and there was no such thing as food stamps.

    I'm a huge fan of boiled eggs in a gumbo.

    Put the eggs on my salad, thanks. Dash of Tabasco and a pinch of file in my gimbo

    Hmmm....
    1. Gumbo with Okra--good for you, eat your friggin' vegetables.
    2. Gumbo-like soup--to keep the kids and Yankees happy
    3. Greens Gumbo--My Dad also made depression food for us to eat when I was young. This one was particulary nasty. But it was better than the turnip soup or the cornmeal mush.

    I'm just surprised that Cali hasn't been on here to pick on me yet for hating eggs.

    I can stand scrambled eggs, but I want nothing to do with boiled or fried eggs. It must run in the family, my mom and uncle can't stand them, either.

    Eggs are the cornerstone of any good breakfast, cake, or fish fry.

    Um, yeah, I can stand eggs when cooked into a recipe.
