    I make dark roux and blonde roux ahead of time (at the restaurant) all the time. I don't store it in a jar but in plastic containers.

    If you like to cook and learned to make roux from your mom, it's great to re live memories by making roux every time...as you need it.

    There's comfort cooking as well as comfort food. Carry on the family tradition by teaching your kids !!
